3 lbs flank steak
1/3 cup chopped onion
2 T butter
4 cups dry bread cubes
1/2 tsp poultry seasoning
1/2 tsp. salt
dash pepper
1/4 to 1/2 cup water to moisten two 1 1/2 lbs flank steaks scored

Directions:
Directions:
In a skillet, cook onions and butter until tender. add seasonings into bread (bread is lightly toasted). Sprinkle with bread stuffing over meat.

Roll lengthwise, securing with toothpicks and string
Roll in flour
Brown in small amount of shortening
Season with salt and pepper
Add 1 can tomatoes (1 pound), 1/4 cup chopped onions
1/4 cup catsup 1/2 tsp. salt
Cover and simmer 1 1/2 to 2 hours or until tender at 350º. Add 1/4 cup chopped green pepper and 1/2 cup mushrooms. Cook an additional 15 minutes. Remove steaks to warm platter.
Mix 1 T flour and 2 T cold water. Stir into sauce and cook until thick and bubbly
