1/2 YELLOW ONION - LARGE
3 CLOVES OF GARLIC
1 PASSILLA OR POBLANO PEPPER
1 JALEPENO
2 CHICKEN BREAST - LARGE
1/2-3/4c WATER
2 tsp CUMIN - GROUND
1tsp CHILLI POWDER
1batch CORN TORTILLA'S - HOME MADE
1tbls CANOLA OIL
GARNISH WITH CHOPPED TOMATO'S AND QUESO FRESCO

slice ther onion thin lenghwise and set aside. finely chop or press the garlic cloves, and mince the jalapeno, combined and set aside. cut the pepper in half, discard the seeds and core and cut the pepper into long, thin strips(jullienne). set aside, now slice the chicken breast into 1/2 inch thick slices, make sure to cut against the grain. heat the canola oil in a large pan, when hot, add the chicken. season with salt and pepper and brown. when brown, not burned, remove form pan and set aside. now add just a touch more oil to your pan and drop in all the vegies, saute them until they start to become soft (3 min). add pre cooked chicken with cumin, chilli powder, and water. set this mixture simmer slowly until almost all the liquid is gone. add salt and pepper to taste and serve in tortilla's.

this is a braised dish so control your heat buy not turning it up to high to start with, about medium heat. when in doubt go lower, it just will take longer to cook, but it wont be burned!
