1 cup oil
3 eggs
2 cups grated carrots
1 small can crushed pineapple and juice
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp baking powder
2 tsp cinnamon
2 cups sugar
2 tsp vanilla
Nuts if desired

Cream Cheese Frosting
1 3oz package cream cheese
1 scant cube margarine
1 tsp vanilla
1/2 box powdered sugar

Preheat oven to 350º

For the cake, sift together dry ingredients into a large mixing bowl. Add the rest of the ingredients and mix together. Pour batter into a greased 9x13 pan and bake for 1 hour at 350º. Let cool completely.

For the frosting put all the ingredients in a bowl and beat until creamy. When the cake is completely cool frost it.
