Ingredients: MEATBALLS: 1/2 pound ground beef 1/2 pound ground pork 1/2 pound ground veal 1 1/2 slices stale white bread, cut into 1/2 inch squares 8 ounce can tomatoes 1 small onion, grated 1 1/2 teaspoon salt 1/4 teaspoon ground fennel 1/2 teaspoon ground allspice 1/4 teaspoon ground mace 1/4 teaspoon ground black pepper 2 eggs
SAUCE: 1 cup chicken broth 1 cup light cream 3 tablespoons butter 1/4 cup finely minced onion 1 tablespoon paprika 3 tablespoons flour 2 tablespoons dry white wine Salt and pepper

Directions:MEATBALLS: Preheat oven to 375º. Lightly grease a shallow pan.
Place meat in mixing bowl. Put bread and tomatoes in blender or food processor and stir until bread is moistened. Add remaining ingredients and process at high speed about 1 minute. Add mixture to meat and mix well with hands.
Shape meat into 3/4 inch balls and place in prepared pan. Bake 20-25 minutes or until brown, stirring occasionally.
PAPRIKA SAUCE: In a small saucepan, heat chicken broth and cream to boiling; remove from heat. Saute onion in butter until tender. Remove from heat; stir in paprika and flour, blending well. Slow stir in chicken broth mixture. Return to moderate heat and simmer for 5 minutes, stirring occasionally. Add wine. Salt and pepper to taste. Add meatballs to sauce. |
