2 c flour
1 1/2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 c sugar
1/2 c soft shortening
1/2 c sour milk
1 c mashed bananas (about 3)
2 eggs, unbeaten
vanilla

Directions:
Directions:
Sift dry ingredients into a bowl. Add wet ingredients. Pour into a 9"x 13" cake pan.

Bake at 375 for 35-40 minutes, or until done.

Top with:

Cream 1/4 c butter and 3/4 c brown sugar. Add 1 1/2 tbsp cream and 1/2 c coconut and 1/4 c chopped nuts. Broil until browned and bubbly.

This was my Mom's go-to cake. She almost always had it in the house. I learned quickly that when broiling it, do not leave the oven for a second. It browns quickly and will burn if you give it an extra second or two.
