8 phyllo pastry sheets
1/4 c butter, melted
4 boneless, skinless chicken breasts, halved
1 bunch of fresh spinach leaves, stems removed
1 bunch fresh basil leaves, chopped
1 large red pepper, cut in strips
3/4 c feta cheese, crumbled

Directions:
Directions:
Lay 1 sheet of phyllo on counter and fold in half(not lengthwise). Brush melted butter on edges. Place one-half chicken breast in the middle, near the bottom of the phyllo. Layer spinach leaves, a sprinkling of basil, a few pepper strips and some feta cheese on top of the chicken. Roll chicken and phyllo over once, fold egdes toward the middle and continue rolling to form a small rectangular package. Brush with a little melted butter. Place on a cookie sheet and cover with a slightly damp cloth while making the rest.

These can be made the day before. Just cover with plastic wrap and refrigerate.

Bake in a 375º oven for 25-30 minutes.

Molly doesn't like spinach, peppers or feta. But amazingly enough, when they are all cooked together in phyllo, she loves them! She has had these for a number of birthdays and sometimes just because I love to see the look on her face when she realises I made them for dinner!
