1. 1 Cup sugar
2. 1 tbls butter
3. 1 1/4 water
4. 1/4 Cup cornstarch mixed with 3 tbls cold water
5. 6 tbls lemon juice
6. 1 tsp grated lemon rind
7. 3 egg yolks
8. 2 tbls milk
9. 1 baked pie crust
Directions:
Directions:
Combine sugar, butter, and 1 1/4 cup water
Cook over medium heat, stirring constantly until sugar dissolves
Mix cornstarch with 3 tbls cold water in cup
Mix thoroughly, and add to sugar mixture
Cook until clear
Add lemon juice, lemon rind, Cook for 2 minutes longer
Add egg yolks, mixed with 2 tbls milk.
Add to sugar mixture and cook 2 more minutes
Cool and pour into baked pie shell, and top with meringue
Bake @ 350 until brown

This recipe needs constant stirring. I once doubled the recipe, and cooked it longer, but it did not turn out well. Do not double recipe
