Cream Cheese Icing


Ingredients:

2 c flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
2 c sugar
1 1/2 c salad oil
4 eggs
2 c finely shredded carrots
1 c drained, crushed pineapple
1/2 c chopped pecans (optional)
1 c finely shredded coconut (optional)

Directions:
Directions:
Mix flour, baking powder, soda, salt and cinnamon in a large mixing bowl.
Add sugar, oil and eggs. Beat with an electric mixer at medium speed for 1 minute.
Stir in carrots, pioneapple, pecans and coconut.
Turn into a greased 9"x13" cake pan or a bundt pan and bake at 350º for 50-60- minutes. Start checking at 50 minutes as you don't want to overcook it.
Cool on a cooling rack. If in a bundt pan, remove from pan after about 10 minutes.
When cool, frost with cream cheese icing.

8 oz cream cheese at room temperature
1/2 c butter
1 tsp vanilla
4 c icing sugar

Directions:
Directions:
Beat cream cheese, butter and vanilla together with an electric mixer at medium speed. Gradually add icing sugar, beating well unti lsmooth and creamy. If it is too stiff to spread, add a bit of milk, 1 tbsp at a time, until it's the right spreading consistency.

This is Dave's favorite cake!!! I usually make it for his birthday. And although I'm not a huge fan of carrot cake, I really enjoy this one.
