Ingredients: 1-2 lbs chicken (I use boneless chicken thighs about 12 pieces) 2 Tbsp butter 1 Tbsp olive oil 1 med onion diced 5-6 cloves of garlic diced 1 Tbsp ginger diced 1 28 oz can diced tomatoes 1 15 oz can tomato sauce 2 Tbsp tomato paste 1 tsp smoked paprika ½ tsp cayenne pepper ¼ tsp curry powder 1 Tbsp garam masala Salt & pepper to taste 2 Tbsp brown sugar 1 c 35 % cream Juice of 2 limes

Directions:• Put all the spices together with the brown sugar in a small bowl and set aside • Put the butter and the olive oil in an oven proof casserole dish • Brown the chicken working batches don't over crowd the pan or the chicken will end up poached • Remove the chicken Add the onion, garlic and ginger fry until the onion is translucent • Add the tomatoes, tomato sauce and the tomato paste • Add the spices/sugar mixture • Put the chicken back in the pan • Add the cream and lime juice Put in the oven or slow cooker for 1 ½ hours @ 325 ******Serve over rice or noodles, or make grilled cheese |

Ingredients: 1 loaf Sesame Seed Egg Bread (Challah) White cheddar Orange cheddar

Directions:• shred the chicken when it's finished cooking • slice the bread • either slice thin or grate both cheeses (I use good cheese it just gives it a little something extra) • butter the outsides of the bread and layer the inside with the cheese and shredded chicken • cook in a hot pan as you would any grilled cheese sandwich • serve with fries, veggie sticks or fancy chips
