Custard Sauce


Ingredients:

1/2 c butter
2 squares unsweetened chocolate(1 ounce each)
2 eggs
1 c sugar
1/2 c flour
1/4 tsp salt
1 tsp vanilla
3/4 c pecans, chopped (optional)

Melt butter and chocolate over low heat. Combine remaining ingredient. Add chocolate mixture and beat until smooth. Pour into a well buttered 8" pie plate. Bake at 350 for 25-30 minutes.
 

Custard Sauce

1 c milk
1 c whipping cream
3/4 c sugar
6 egg yolks - slightly beaten
2 tbsp grand marnier, or any orange flavored liquer

In a heavy saucepan over medium-high heat, bring milk, cream and sugar to a full boil. Whisking constantly, add 1/4 of the hot cream mixture in a slow, steady stream to egg yolks. Reduce heat to medium. Whisk warm egg yolk mixture slowling into remaining cream mixture.

Whisking constantly, cook until mixture thickens and coats back of a metal spoon(about 3 minutes-it will happen all of a sudden). DO NOT OVERCOOK OR EGGS WILL SCRAMBLE. Whisk about 3 minutes until slightly cool. Whisk in liquer, then strain. Place palstic wrap over custard and refrigerate until chilled.

To serve, put sauce on pate, then a slice of the pie on top (or pour it over the pie, or both!)

This came from a Best of Bridge cookbook, Grand Slam, and is one of my favorite quick and impressive looking desserts. Sprinkle a few raspberries or strawberries over it and it looks fantastic!
