1/2 tsp sugar
2 tbsp. flour
1 1/2 tsp salt
1 tsp dry mustard
1/4 tsp black pepper
1/4 tsp ground sage
4-5 lb pork loin roast (for the kids, that's about 2 kg)

Topping"
1 1/2 c applesauce (or minced apple)
1/2 c brown sugar
1/4 tsp cinnamon
1/4 tsp mace
1/4 tsp salt
small amount of water for gravy

Directions:
Directions:
Mix sugar, flour, salt, mustard, pepper and sage together. Rub over surface of pork. Place fat side up in a roasting pan and bake at 325º. for 1 1/2 hours.

Mix topping ingredients and spread over roast. Bake 1 hour longer. Add water to bottom of pan to make the gravy.

How many ways can you cook pork with apples?! This is a favorite of ours, it's quick and delicious. I often use fresh apples and make unsweetened applesauce in my blender.
