Burbon Brown Sugar Pork Tenderloin Recipe

Ingredients: 2 pork tenderloins (1 lb each) - trimmed of all visible fat
Marinade: 1/2 cup Bourbon 1/2 cup dark brown sugar, packed 1/2 cup reduced sodium soy sauce 1/4 cup fresh lemon juice 1 1/2 Tbsp Worcestershire sauce 1 cup water 2 sprigs fresh thyme, chopped (or 1/2 tsp dried, crumbled)

Directions:Combine the seven marinade ingredients in a shallow glass casserole dish. Stir until sugar is dissolved. Add pork tenderloin turn to coat all sides. Cover with plastic wrap and marinate in the refrigerator 8-12 hours, turning occasionally.
Preheat oven to 450 degrees.
Cover a half sheet pan with foil for easy clean-up, this will get messy.
Place tenderloin side by side without touching - on a rack placed on the half sheet pan. Roast for 30-35 minutes until internal temperature reaches 145 degrees F, basting occasionally with the marinade.
Remove and let rest about 5 minutes before slicing. Slice into medallions at a 45-degree angle, across the grain - about 1/4" thick. Center should be pink, but firm. |

Notes: We've made this numerous times. It always comes out great. Great served with roasted garlic potatoes and a crisp salad. Great leftovers or appetizer - serve on slider buns with sauce made from equal parts BBQ sauce and ranch dressing.
