2-3 lbs. Chicken Breast, chopped
12-16 oz. fresh Broccoli
2 Garlic cloves or ginger
4-5 lg. Carrots, sliced
Red Pepper Flakes (optional)
2 Tbsp. Olive oil

Teriyaki Sauce
2 Tbsp. Ginger, chopped
⅓ cup low sodium Soy Sauce
⅓ cup cold Water
3-4 Tsp. Arrowroot Powder or Corn Starch
¼ cup local Honey or Sugar

Teriyaki Sauce
For use today:
1. In a small bowl mix all the Teriyaki Sauce ingredients.
For use later:
1. In a small sauce pan mix all Teriyaki Sauce ingredients, over medium to low heat, heat the sauce until thickens stirring occasionally. About 5 minutes. Cool
2. Place in air tight glass container if for future use, and store in the refrigerator.

Chicken & Vegetables
1. In a large skillet, over medium to high heat, add the olive oil.
2. Add the chicken and carrots and cook stirring occasionally until almost tender, about 6-8 minutes.
3. Add garlic and cook for another minute.
4. While chicken is cooking place the broccoli in a microwave safe dish and microwave for 6-7 minutes.
5. Add the Teriyaki sauce from the bowl to the chicken and carrots and stir for about 1-2 minutes or until sauce thickens. Turn heat off and add the broccoli and pepper flakes if using. Stir to combine.

Serve over rice or rice noodles
