2 cups seeded and diced cucumber
2 cups seeded and diced red bell pepper
2 cups diced ripe tomatoes (or use Rotel tomatoes with the juice)
1/2 cup chopped red onion
2 cups spicy V-8
1/3 cup red wine vinegar
1/3 cup EVOO--olive oit
5 dashes Tabasco
1/2 tsp salt
1/4 tsp black pepper
1 Tbsp chopped cilantro
1/2 Tbsp chopped Italian parsley
2 cloves pressed garlic
Optional--chopped jalapeno, sour cream

Mix all--some like to puree. Adjust salt. Chill 4-6 hours.
