2 c. sugar
1 c. light corn syrup
½ c. water
1 c. butter
3 c. (about 12 oz.) raw cashews
1 tsp. baking soda

Directions:
Directions:
In a 3-quart saucepan combine sugar, syrup and water. Cook and stir until sugar dissolves. Bring to boil; add butter and stir until butter is melted. Clip a candy thermometer to side of pan. Reduce heat to medium low; continue boiling, stirring occasionally until thermometer registers 280º (about 35 minutes - soft ball stage).
Stir in the nuts; continue cooking over medium low heat, stirring frequently to 300º (10 to 15 minutes - hard crack stage).
Remove from heat. Add baking soda, mixing thoroughly. Pour mixture onto 2 buttered baking sheets 15" x 10" x 1".
As brittle cools, stretch it by lifting and pulling with two forks from edges. Loosen from pans quickly; pick up sections and break into bite-size pieces. Store tightly covered.
