1 pound boneless, skinless chicken breasts
1 medium onion, chopped
1 can (15 ounces) chickpeas, drained and rinsed
2 medium sweet potatoes, peeled and diced
1/2 cup full fat coconut milk
1/2 cup chicken stock (make a bit stronger)
1 can (15 ounces) tomato sauce
2 tablespoons (or a bit more) curry powder
1 teaspoon (or slightly less) salt
1/2 teaspoon (or a bit more) cajun seasoning
1 cup green peas, frozen
2 tablespoons lemon juice

Directions:
Directions:
Combine coconut milk, chicken stock, tomato sauce, and spices in bottom of slow cooker. Add chicken breasts, onion, chickpeas, and sweet potatoes. Gently toss ingredients so evenly coated.

Cook on low for 6 hours. Stir in peas and lemon juice near the end.

Serve over rice.
