4 boneless skinless chicken breast cut into bite size cubes

Oil for frying chicken

Batter for chicken:
1/2 cup flour
1/4 cup corn starch
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Sweet & Sour Sauce:
3/4 cup granulated sugar
2 tablespoons rice vinegar
3 tablespoons ketchup
2 tablespoons corn starch
3/4 cup water

Directions:
Directions:
Cut chicken
Warm oil in deep frying pan
Mix ingredients for chicken batter well in medium bowl.
Mix ingredients for sauce with whisk and set aside.
Fry chicken until cooked through and drain on paper towels.
When all chicken is cooked mix in bowl with sauce or serve sauce on the side for dipping for crispier chicken.
Red pepper flakes can be added to sauce for a little kick!

This recipe came from a neighbor when I lived on Point Mugu Naval Base. It is a little time intensive but is well worth it!
