4 c beet juice
1/2 c lemon juice
1 packkage powder pectin
1 package of grape Kool aid - unsweetened
6 c sugar

Directions:
Directions:
Wash & peel beets and place in a saucepan. Cover with water and cook until tender. Remove the beets, cool and save the juiice.

Boil the beet juice, lemon juice, pectin and Kool Aid for 1 minute. Add sugar and boil 4 minutes or until the mixture coats the spoon. Pour into jars and seal.

Do not use pre-sweetened Kool aid.

My brother used to work for a large food wholesale and often brought concord grapes home, which Mom used to make grape jelly. But one year he wasn't able to get them and somehow, somewhere, Mom found this recipe and decided to try it. You honestly can't tell the difference between it and the real thing! And you can eat the beets as well - bonus!
