Ritz Apple Pie Recipe

2 c water
2 c sugar
2 tsp cream of tartar
2 unbaked pie shells
40 Ritz crackers
1 tsp lemon zest
2 tbsp. lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
2 tbsp. butter, cut into small pieces

Preheat oven to 350º

In a medium-sized saucepan, combine water, sugar and cream of tartar and bring to a boil.. Once it becomes syrupy, stir in the lemon juice and zest. Reduce the heat to low and simmer for approximately 15 minutes. Allow to cool.

Break the crackers into the pie shell. Pour syrup over them and sprinkle with cinnamon and nutmeg. Place the butter pieces on top of the crackers.

Top the pie with remaining pie crust. Pinch together crusts and trim off excess. Make a coupe of slits in the top of the pie so the steam can escape while cooking.

Bake for 30-35 minutes, or until the pie crust is golden brown.

When we lived in Edmonton, Dave used to come home for lunch every day. We had just renovated a little 1 bedroom house and I was loving my little kitchen. For some reason I started reading the back of the Ritz cracker box and found this recipe. So, being in a creative mood, and not believing that this would be any good, I made it for our lunch dessert.
After Dave raved about how delicious it was, I told him the truth. Even now, he feels that I betrayed him, not putting real apples in the apple pie that he liked so much. I don't think I've made it again, but thought it was too fun not to share.
