2 1/2 c. flour, unsifted
1/2 c. butter
1 1/2 c. sugar
1 c. crushed pineapple
3 egg whites
2 t. baking powder
1/3 t. salt
1/4 c. water
1 t. vanilla

Icing:
3 T. butter
1 3/4 c. powdered sugar
4 t. cinnamon
1 egg yolk

Directions:
Directions:
Cream butter and add sugar gradually. Add crushed pineapple. Sift flour, salt and baking powder together several times and add alternately with water. Add vanilla. Fold in egg whites, beaten stiff. Bake in two greased and floured layer cake pans in a moderate oven about 35 minutes.

Icing:
Add about 3 T. hot coffee or enough so icing is of consistency enough to spread.
