2 eggs whites
¾ c. unsweetened applesauce
1½ tsp. vanilla
3 c. flour
1¾ c. sugar
1 tsp. baking soda
¼ tsp. salt
2 c. sliced bananas (about 2 medium)
½ c. chopped pecans
1 can (8 oz.) crushed pineapple with juice
¾ c. sifted confectioners sugar

Directions:

Electric mixer on high, beat eggs and whites for 1 minute until forming. Beat in applesauce and vanilla. Combine flour, sugar, baking soda and salt. Add half flour to eggs and beat on med until combined, add remaining flour and beat 1 minute. Stir in bananas and pecans. Drain pineapple (reserve 2 T. juice) add to batter. Generously coat Bundt Pan with spray. Bake 325º for 60 - 65 minutes. Cool in pan inverted on rack. Whisk sugar and pineapple juice. Drizzle over cake.
