2 eggs
1 c sugar
1 c melted butter, cooled
1 c Roger's golden syrup
1 c whipping cream
8 to 81/2 c flour(you may need a bit more but the dough has to remain a bit sticky and very pliable)
2 tps baking soda

In a large bowl of an electric mixer, add the first 6 ingredients, in order.

Add flour and baking soda to egg mixture, a bit at a time.

Roll a spoonful of dough out very thin. Fry on a griddle at 400º until a very light brown. Brush off extra flour and cool on a tea towel.

When they are all made, match up 2 pieces, spread with butter mixture and cut into triangles.

Butter Mixture: 2 lbs soft butter, 3/4 c each of white and brown sugar, 5 tsp cinnamon

There were 2 ladies at Trinity Lutheran Church in Grande Prairie, Irene and Irene, Ness and Dalen) that made this for every potluck. Their lefse was always perfect, color & shape, and was loved by everyone. One year, Corinne Aicken and I decided that we should try to make it. When Dave came home for lunch he asked what had exploded in the kitchen. There was flour EVERYWHERE! Neither one of us has perfected the art of making Lefse, but the taste is still right. Molly & Emilie have been coming to help and learn the last couple of years, Molly is an excellent roller and Emilie is great at putting them together. For years, I had a Lefse making party on a Saturday before Christmas and we would have 8-10 ladies working on their lefse. Some made this one and some made a different one. Our outlets are all marked with numbers so we wouldn't blow a breaker when we all plugged in our griddles. One year, Karie put us in touch with someone she knew that did logos, etc. and I made aprons for all the ladies with 'Lefse Ladies' embroidered on the bib. I haven't met a person who didn't like Lefse and I think of Irene and Irene every time I make it.
