1 1/2 c scalded milk
2 eggs, separated
1/2 c sugar
1 heaping tbsp. flour

1/2 dessicated coconut

1 baked pie shell
1 tbsp. icing sugar
shredded coconut

Directions:
Directions:
Scald milk. In a small bowl, cream sugar and egg yolks. Add flour. Slowly add the milk and dessicated coconut to the egg mixture, whisking the whole time. Pour the mixture back into the saucepan and cook until thick and creamy.

Place in the pie shell.

Whip the egg whites and icing sugar until stiff. Spread on top of the pie filling and sprinkle with shredded coconut.

Bake for 5-10 minutes, just until the meringue has browned.

This was my favorite pie when I was a kid. Mom made pies almost every Saturday, but this one she only made for guests or special occasions.
