2 chicken breast, butterflied and flattened
1/2 cup flour
2 eggs
2 tbsp Parmesan cheese
Handful of fresh parsley
1 cup dry white wine
1 cup chicken stock
1 garlic clove, crushed
4 tbsp olive oil
4 tbsp butter
1/2 lemon juiced
Salt and pepper to taste

Directions:
Directions:
Lightly beat eggs. Season with salt and pepper. Add chopped parsley (save a little for garnish). Add cheese. Dip breasts in flour, shaking off excess. Dip in egg mixture. Brown on medium heat in olive oil and half of the butter, about 1 minute each side. Transfer to a hot plate and let rest. Add the wine, crushed garlic to the pan, juice from the lemon and the chicken stock on high heat. Add the remaining parsley and butter and reduce sauce for about 2 minutes. Return chicken to pan (medium heat). Serve the chicken and reduce the sauce a little more until it thickens.
