Pizza Dough:

Medium Pizza:

2 c flour + 1 c flour for kneading
¾ c water
½ c corn oil
1 ½ tsp yeast
¾ tsp sugar
¾ tsp salt

1 lb low-fat, low-moisture mozzarella slices

Large pizza:

2 ½ c flour + 1 ½ C flour, for kneading
1 C water
⅔ C corn oil
2 tsp yeast 1 tsp sugar
1 tsp salt

1 ½ lb low-fat, low-moisture mozzarella cheese slices


Sauce:
Large can of San Marzano tomatoes

Directions:
1. In mixing bowl, add warm water and yeast; whisk completely. Add corn oil, salt and sugar; mix well. Add first portion of flour, mix with hands forming a ball. Knead dough on floured surface, with the additional flour, until no longer tacky, about 3-5 minutes. This will be the consistency of biscuit dough. Place dough on oiled pizza pan, cover and let sit about 30 minutes; until doubled in size and relaxed. Work dough around pan and half way up sides.

2. Line bottom of crust with 2 layers of sliced mozzarella. Place toppings over the cheese, top with tomatoes. Break them down as you distribute over the toppings. They will be chunky. you will use less than a can for this step.

3. Make a mixture of 1 part oregano/5 parts Parmesan cheese to sprinkle over the crust edges and the top of the pie.
This is optional.

4. Preheat oven to 400º F. Place pizza in middle of oven, cook for 30 minutes. Cook another 10 minutes, if cheese isn't gooey, and crust isn't golden.

Mary and I went to a class to learn how to make this pizza. I like crispy pepperoni, so I put it on last, over the sauce.
