1 tsp salt
¼ tsp crushed, dried thyme
¼ tsp crushed, dried marjoram
¼ tsp celery salt
¼ tsp pepper
3 lb broiler-fryer chicken

Directions:
Directions:
1. Combine salt, thyme, marjoram, celery salt and pepper. Rub on chicken. Sprinkle additional salt inside the cavity.

2. Line chicken pot with foil; add chicken, breast side up.

3. Cover tightly and place in COLD oven. Turn on oven at 400º and roast for 1½ hours, or until tender.

I make this in a cast iron dutch oven, and don't line it with foil. I tried the foil, but it didn't crisp up the skin. I really like the crispy skin on the chicken. The juices from this chicken makes a fabulous gravy to serve over rice. Just add some flour, and a little chicken bouillon, maybe some water, if needed.
