2 Cups Rotisserie Chicken
2 Cups Shredded Monterey Jack Cheese
1 Bunch Green Onions, Thinly Sliced
! Cup Salsa
1 Teaspoon Cumin
1 Teaspoon Coriander
Salt

20 Small Flour Tortillas

Directions:
Directions:
1. Preheat oven to 425º F.
2. Line baking sheet with parchment paper or a silpat sheet.
3. Shred or dice chicken to taste. In a large bowl toss chicken, cheese and onions. Add salsa and spices and then add salt and pepper to taste.
4. Place 2 tablespoons of chicken mixture in a line on tortilla. Fold sides up and then roll tortilla tightly into a burrito. Place burritos on the baking sheet with seam side down leaving at least ½ inch spacing.
5. Bake for 15-17 minutes or until tortillas are a golden brown.
6. Let rest for 5 minutes before serving with additional salsa and/or sour cream.

You can add things like rice, black beans, refried beans, cilantro, etc to taste. If your tortillas do not want to cooperate, nuke them for 20 seconds first before rolling. I use an entire pre-cooked chicken from Costco and almost have to double the recipe to use all of the available meat.
