½ c. each dried currants, red and green candied cherries, dried pears, chopped walnuts
1 c. unsweetened applesauce
1 c. sugar
2 large eggs
½ c. vegetable oil
2 tsp. freshly grated lemon peel
1½ tsp. baking powder
½ tsp. salt
½ tsp. soda
2¼ c. flour

Directions:
Directions:
Heat oven to 325º. Coat 9x5x3” pan with nonstick spray. Put fruit and nuts in a medium bowl and mix. Whisk applesauce and sugar in bowl till sugar dissolves. Whisk in eggs, then oil, lemon peel, baking powder, soda and salt till well blended. Stir in flour, then fruit mixture. Spread evenly in pan, sprinkle with reserved ½ c. fruit mix. Bake 70 minutes.
