¾ c. + 2 tsp. lemon yogurt, divided
½ c. dried apricots
½ c. butter or margarine, softened
¾ c. + 2 tsp. powdered sugar, divided
3 eggs
1 T. grated lemon peel
2 c. self-rising flour*

Directions:
Directions:
In a blender, combine ¾ c. yogurt and apricots; cover and process until smooth. In a mixing bowl, cream butter and ¾ c. powdered sugar. Beat in eggs, lemon peel, and yogurt mixture; mix well. Add flour just until combined. Spoon into a greased 8” loaf pan. Bake at 325º for 60-65 minutes or until done. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Combine the remaining yogurt and powdered sugar; drizzle over loaf. Yield: 1 loaf.
*As a substitute for self-rising flour, place ½ t. baking powder and ½ t. salt in a measuring cup. Add all-purpose flour to measure 1 cup.
