2 tBS Canola Oil
1 Small Red Onion, finely diced
2 TBS finely grated Fresh Ginger
2 tsp finely grated Orange Zest, plus 1 C Fresh Juice from 2 oranges, divided
1 C Fresh Grapefruit juice (from 2 grapefruits).
1 C cane sugar, plus more to taste
1 lb Fresh or Frozen Cranberries, divided
2 TBS Campari
2 - 14oz grapefruits, segmented
1/4 tsp Kosher Salt
1/4 tsp Fresh Ground Black Pepper
1 TBS chopped Fresh Flat-Leaf Parsley

1. Heat oil in medium-size saucepan over medium heat.

2. Add onion and ginger; cook stirring occasionally, until onion is soft, about 4 mins.

3. Add OJ, grapefruit juice and sugar; bring to boil over high heat.

4. Boil, undisturbed, until sugar melts and mixture reduces slightly, about8 mins.

5. If needed, add more sugar to taste.

6. Stir in half the cranberries; cook over high, stirring occasionally, until berries pop and break down and mixture begins to thicken, about 10 mins.

7. Add Campari and remaining berries; cook, stirring occasionally, just until berries pop, about 5 mins.

8. Remove from heat; stir in grapefruit segments, orange zest, salt and pepper.

9. Transfer to a heatproof bowl; stir in parsley.

10. Let cool to room temperature.
