2 eggs
1 tbsp. water
1 ounce cottage cheese
1 ounce cooked, drained baby spinach
⅛ tsp. salt
1 pinch of pepper
non-stick cooking spray

Directions:
Directions:
In a small bowl, beat eggs with water, adding salt & pepper.

Generously spray the bottom of a medium non-stick frying pan with cooking spray and preheat to medium. Gently pour in the eggs and tip the pan to make sure the egg mixture evenly coats the bottom of the pan. Using a rubber spatula to lift the edges of the omelette, allow the uncooked egg on top to flow under the cooked egg. Cook until the omelette is still wet, but not runny. Remove the frying pan from the heat.

Spoon the cottage cheese over one half of the omelette. Spoon the cooked baby spinach over the cottage cheese. Fold the "empty" half of the omelette over the filled half.

Slide onto the serving plate. Makes one omelette.
