2 cups cooked brown rice
2 cups frozen corn, thawed
1 15 ounce can black beans, drained and rinsed
1 10 ounce can diced tomatoes and green chilies (Rotel)
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. cumin
⅛ tsp. turmeric
olive oil flavored cooking spay

Directions:
Directions:
Prepare rice according to package directions, using chicken broth instead of water.

In a large bowl combine rice, corn, beans, tomatoes and green chilies with spices. Mix until spices are evenly blended throughout. Let sit for 20 minutes to allow spices to infuse into the mixture.

Spray a large skillet with cooking spray. Heat the mixture, stirring frequently until heated through.
