1 C butter, softened
1 C granulated sugar
1 lg egg, beaten
1 tsp vanilla extract
2 C all-purpose flour
½ tsp baking soda
½ tsp cream of tartar
2-3 T granulated sugar for topping

Directions:
Directions:
Cream butter and sugar, egg, and vanilla until light and fluffy. Sift flour, baking soda and cream of tartar together. Gradually stir into creamed mixture to make a smooth dough. Chill in refrigerator for at least 3 hours.
Preheat oven to 325ºF. Roll into 1" balls and dip in sugar, Place 2" apart on ungreased cookie sheet. Flatten with fork. Bake for 12-15 minutes. Leave on cookie sheet for at least 5 minutes (to firm up a bit); then cool on a wire cooling rack.

Variation:
You can use almond extract in place of the vanilla extract and frost with almond flavored butter frosting. Use colored sugar or jimmies for Christmas festivities.--Pat
