2 ¼ c old fashioned rolled oats
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp salt
1 c ripe mashed bananas (about 2 large or 3 medium)
¾ c milk*
¼ c honey
1 large egg
1 tsp vanilla extract
1 c fresh or frozen blueberries**

*Any kind of milk (such as almond or coconut) will work in this recipe.
**If using frozen blueberries, make sure to gently stir them in so they do not bleed their color and turn the oatmeal purple.

1. Preheat oven to 350º F. Spray an 8-inch square baking pan well with non-stick cooking spray and set aside.
2. In a large mixing bowl, mix together the oats, baking powder, cinnamon, and salt. Set aside.
3. In a separate mixing bowl, mix together the mashed bananas, milk, honey, egg, and vanilla extract until fully combined. Add the wet ingredients to the dry ingredients and mix until everything is well incorporated. Gently fold in the blueberries. Pour the mixture into the prepared baking pan and smooth it out into one even layer.
4. Bake for 30-40 mins or until the top is set and lightly golden brown.
5. Remove from the oven and allow to cool for 10-15 mins. Slice and serve warm, or cool completely, cover tightly, and refrigerate until ready to enjoy.

This is my healthier option of baked oatmeal I like to make. I have added peaches in addition to the blueberries and it is delicious! (Peach and Blueberry baked oatmeal is one of my favorites from All That and A Bag of Chips!)
