1¼ C all-purpose flour, divided
⅓ C powdered sugar
½ C cold butter
1¼ C granulated sugar
2 eggs, beaten
2 C rhubarb, chopped finely
½ C walnuts, chopped
½ C coconut, flaked

Directions:
Directions:
Preheat oven to 350ºF. Combine 1 C flour and powdered sugar. Cut in butter, using a pastry cutter, until crumbly. Press into 9" X 13" glass baking pan. Bake for 13-15 minutes. In a bowl, combine sugar and remaining flour. Add eggs and mix well. Stir in rhubarb, walnuts and coconut. Pour over crust. Bake for 30-35 minutes longer or until set. Cool and cut into bars. Refrigerate.

Makes 2½ to 3 dozen bars

Personal Notes:
When baking with rhubarb, do not use pans that contain aluminum, iron or copper. Rhubarb has high acidity which causes a reaction with these metals. It will cause the rhubarb to turn a brownish color and can discolor the pans. Use glass or blue enamel pans.
