1 rotisserie chicken—remove skin and shred or can use diced cooked chicken pieces
6 small carrots peeled and diced
3 stalks celery diced
1 sweet onion, diced
1/2 c. fresh parsley, chopped (or 1 Tbsp. dried parsley)
2 Tbsp. butter
1 tsp. salt
1/2 tsp. smoked paprika
1/2 tsp. dried thyme
1/2 tsp. pepper
4 c. chicken stock
1 can cream of chicken, celery, or onion soup

Dumplings

2 c. flour
4 tsp. baking powder
1 tsp. salt
3/4 c. milk
4 Tbsp. butter

Directions:
In a large stock pot over Med-High heat melt 2 T of butter, add carrots, celery, and onion, parsley and all the seasoning salt through pepper. Cook about 5 minutes. Add soup, chicken stock and shredded chicken. Stir well. Bring to a low boil and reduce heat to simmer.

To make dumplings, whisk together flour, baking powder, and salt. Pour in the milk, remaining tablespoon of melted butter and stir together with a spatula until a smooth ball of dough is formed.

Drop dumpling balls onto simmering stew one at a time. Dough should make 15 dumplings. Cover the pot and allow to cook without uncovering on a low simmer for 25 minutes. Serve immediately.
