Three onions, sliced very thin
3 tbsp. butter
1 tsp. sugar
1 tbsp. flour
1 cup dry white wine (some prefer red wine, but white is classic)
4 cups beef broth
Salt and pepper
Toasted rounds of French bread
Gruyere or Swiss cheese, sliced or grated

Directions:
Caramelize the sliced onions in butter. Add sugar to help deepen the color of the onions. The process will take about 20 minutes. Sprinkle with flour, then add the wine and broth to the pot. Cook for an hour or more. Spoon into small crocks and top with toast rounds and cheese. Broil carefully until brown on top.
