2 10 oz packages chopped broccoli, cooked and drained
OR
fresh broccoli, cooked and drained (fresh is tastier)

1 can cream of mushroom soup
1/2 cup mayonaise
1 small onion, grated (not chopped)
1 Tbsp lemon juice
1 cup sharp cheddar cheese, shredded or grated
1 egg beaten
Ritz crackers
salt and pepper

Directions:
Directions:
Place broccoli in casserole dish.

Mix all using 1/2 cup of grated cheddar. Pour mixture over broccoli and spread evenly.

Top with the remaining 1/2 cup cheddar cheese and crushed Ritz crackers --drizzle with melted butter if desired

Bake at 375 for about 20-30 minutes.
