2 T. butter
1 cup onion, finely diced
1 cup celery, finely diced
4 cups chicken broth
1 large head of cauliflower
1 cup cream
¼ cup milk
2 T. corn starch
⅛ tsp. ground nutmeg
½ tsp. salt
1 tsp. white pepper
2 cups(8oz.) cheddar cheese, shredded



Directions:
Directions:
In 5 quart saucepan, on medium heat saute onion
and celery in butter for about 3 minutes. Add
chicken broth and cauliflower, bring to a boil.
Reduce heat to med-low and simmer 10 minutes.
Add creamer, nutmeg, pepper and salt. Mix corn
starch with milk. Whisk in soup and cook until
thickened and heated through, turn off heat, add
cheese and stir until melted and smooth.
Serves 6 to 8.
