Strawberry Bread Recipe

For Bread:
3/4 c granulated sugar
1/2 c milk
1/2 cup oil
1 large egg
1-2 tsp vanilla
2 c all-purpose flour
2 tsp baking powder
1/4 t salt
2 c diced strawberries
2 T all-purpose flour to coat the strawberries
For glaze:
2 c powdered sugar
2 T melted butter
1/3 c finely diced strawberries
2 T melted butter
1/2 tsp vanilla
1-2 T heavy cream or milk (optional to thin icing)

Directions:

Preheat oven to 350.
In a medium bowl stir together the sugar, milk, oil, egg, and vanilla. In a separate bowl, combine the flour, baking powder, and salt. Add the dry to the wet and stir until combined.

In a small bowl, toss the strawberries and flour to coat and fold gently into batter.

Pour the batter into a greased 9X5 bread pan and bake at 350 for 50-55 minutes. Check doneness with a toothpick. Cool bread for 10 minutes and then remove from the pan and cool completely on a wire rack.

To make the glaze combine the sugar, butter, diced strawberries, and extract. Mix until smooth.

Don't add extra strawberries as the bread stays together better with 2 cups. For higher rising bread, use 1 tsp baking powder and 1/2 tsp baking soda.
