⅔ c. canned evaporated milk
2 c. firmly packed brown sugar
¾ c. unsalted butter, cut into chunks
¼ tsp. salt
¾ tsp. vanilla
1 ¾ c. powdered sugar
1 c. toasted walnuts

Directions:

Coat an 8" square pan with cooking spray. Line with plastic wrap, leaving a 2-inch overhang on two sides.
Bring milk, sugar, butter and salt to boil over medium-high heat, stirring constantly.
Reduce heat to low and stir frequently until candy thermometer reads 240º F (soft ball stage). This will take about 20 to 30 minutes.
Pour into metal bowl; add vanilla; beat with electric mixer at medium speed.
Slowly add powdered sugar and continue beating until fudge is thick and smooth (3 to 4 minutes).
Stir in the walnuts. Spread in the pan and refrigerate uncovered for about 30 minutes.

This is Eddie's favorite. Mom made the best, but I could never find her recipe so combined a couple and hope it is somewhat close.
