1 whole chicken breast (about 1 lb.)
½ tsp. cornstarch
½ tsp. salt
dash of white pepper
1 c. bean sprouts
1 Tbs. vegetable oil
2 eggs, slightly beaten
2 Tbs. vegetable oil
1 jar (2 1/2 oz.) sliced mushrooms, drained
½ tsp. salt
2 Tbs. vegetable oil
3 c. white rice
1-2 Tbs. soy sauce
dash of white pepper
2 green onions, chopped

Directions:
Directions:
1. Remove bones and skin from chicken; cut chicken in 1/4 inch pieces. Toss chicken with cornstarch, 1/2 tsp. salt and dash of pepper. Rinse bean sprouts in cold water; drain
2. Heat wok until hot. Add 1 Tbs. vegetable oil, coating pan completely. Add eggs, cook and stir until eggs are thickened throughout but still moist. Remove eggs from wok.
3. Add 2 Tbs. vegetable oil to wok, coating pan completely. Add chicken; stir-fry chicken until chicken turns white. Add bean sprouts, mushrooms, and 1/2 tsp. salt; stir fry 1 minute. Remove from wok to strainer.
3. Add 2 Tbs. vegetable oil to wok. Add rice; stir fry 1 minute. Add chicken mixture. Add eggs, and green onions.
