1/2 c. butter
1/2 c. each chopped celery, and bell peppers
1/2 c flour
1 tsp salt
2 c. milk
1/2 tsp black pepper
1/4 c. chopped pimento
1/2 c. shredded carrots
1 can cr of mushroom soup
1/2 lb grated American cheese
2 pkg.(9oz) frozen French fries

Sauté bell pepper and celery in 1/2 c. butter.
Cook until tender.
In mixing bowl blend flour, salt and pepper.
Add milk and stir well.
Now add soup, carrots, pimento and 1/2 cheese.
Cook until thick as cream.
Place potatoes in large baking dish.
Pour sauce over potatoes.
bake 25 to 30 min.at 400 degrees.
Sprinkle remaining cheese over casserole and bake 5 to 10 more min. or til slightly brown and cheese melted.
