2 to 4 pounds boneless, skinless, chicken breast strips
1 Jar Soy Vay Teriyaki Sauce
Broccoli florets
1 bag fresh baby spinach
Fresh snow peas
Sliced carrots (if desired)
Green onions, chopped
1 diced white onion
1 or 2 cloves minced garlic (1 teaspoon if using the minced garlic in the jar)
1 can water chestnuts, drained
1 can baby corn, drained (if desired)
2 or 3 Tablespoons canola oil

Cut the chicken strips into bite-size chunks. Put them in a glass Pyrex dish or glass bowl and pour the jar of teriyaki sauce over them. Cover tightly and refrigerate several hours to marinate. (One hour is enough, but the longer you can marinate it, the better).

Begin cooking the brown rice following the directions on the package. Let it cook while you make the stir fry.

Wash and cut all the veggies.

Using either a wok or a very, very large skillet heat the oil and saute the diced onion and minced garlic. Add the marinated chicken and teriyaki sauce it marinated in. Cook the chicken, stirring continuously until it is fully cooked (white on the inside). You will have to cut into a piece to check if it is fully cooked. Then remove the chicken and set aside in a clean dish (not the dish you marinated it in). Leave as much of the sauce in the wok as possible. Then add all the other veggies and stir. Cook until it looks done. Then stir the chicken back in.

Serve immediately, over a bed of brown rice if desired.

Slice the carrots very thin if you want them well cooked (soft).

It never seems like there is enough chicken when we cook this, so make a little more than you think you will need. I usually figure about 1/2 pound per person, or more.

You can use any vegetables you like in this recipe...squash, cauliflower, bok choy, etc. Just play with it until you find a combination you like.

The leftovers are delicious!!!

Be very careful that none of the raw chicken touches your countertops or sink, and that nothing splashes when you are rinsing the chicken. Wipe off your countertops and sink with water, Clorox wipes, and water again. Use paper towels, not your sponge or your dishcloth. Use paper towels to dry your hands after washing them.
