1 pound bacon, cut into 1 inch pieces
2 cups chopped onions
1 head red cabbage, cored and slivered
3 Granny Smith or other tart apples, cored and cut into one inch cubes
1 cup golden raisins
3/4 cup dry red wine
3/4 cup red wine vinegar
3 tbsp (packed) brown sugar (dark)
2 tsp. caraway seeds
1 tsp. dried thyme
1 tsp. freshly ground black pepper
1/2 tsp. salt

Directions:
Directions:
Cook the bacon in a large deep skillet or dutch oven over low heat for 15 minutes
Add the onions and cook until wilted, about 10 minutes
Add the remaining ingredients and stir well.
Cover the skillet and cook over medium heat for 1 1/2 hours, stirring occasionally. Adjust the seasonings and serve hot.
