3 cups sugar
2 cups water
6 oz. frozen concentrated orange juice (defrosted)
1/2 cup heavy cream
1 tsp grated orange rind (ground very fine)
Orange flavoring
Orange food color

Directions:
Directions:
Prepare slab same as basic fondant.
In heavy pan mix sugar and water.

Stir until grains of sugar are dissolved, turn on heat, wash sides down, put lid on for 2 minutes. Remove lid and cook to 226º.

Add 1/2 cup heavy cream and cook to 230 degrees. If stormy cook to 231º. Pour out on prepared slab. When cool start whipping. When fondant has turned creamy and thick and approximately 1 tsp of grated orange rind. Ground very fine. Add orange flavoring and orange food color to taste.

RASPBERRY AND STRAWBERRY FONDANT

Follow directions as basic fondant, only substitute 1/4 cup of water with 1/4 cup juice. (No seeds) DO NOT ADD ANY KARO SYRUP.
Complete as same as basic fondant.
