1 c. milk, scalded
4 T. shortening
4 T. sugar
1 t. salt
1 cake fresh or 1 pkg. dry yeast
1/4 c. lukewarm water
1 well-beaten egg
3 1/2 c. flour

Directions:
Directions:
In a saucepan, combine water milk, shortening, sugar and salt. Cool to lukewarm. Add yeast softened in lukewarm water. Add egg. Stir in flour gradually to form soft dough.

Turn dough onto a lightly floured surface and allow it to rest (about 5 minutes) before kneading. Form dough into a large ball and place it in a greased, deep bowl, large enough to allow the dough to double in size. Turn the dough to bring greased surface to the top. Cover with waxed paper or foil and let stand in a warm place (about 80 degrees) until the dough is doubled (about 1 hours).

Punch down dough with fist and pull the edges of the dough into center and turn dough over in the bowl. Cover and let rise again almost doubled (about 1 more hour). Turn out on lightly floured surface and proceed with the desired shape. Either the shortening or sugar or both can be increaed in this recipe, if desired.

Makes 2 dozen rolls.
