2 cups onion, chopped
3 green bell peppers, chopped
3 zucchini, chopped
2 cups mushrooms, chopped
3 tbsp. chilli powder
3 garlic cloves, minced
2 bay leaves
2 tsp. ground cumin
2 (29 ounce) cans diced tomatoes
2 (15 ounce) cans tomato sauce
salt and pepper to taste
non-stick cooking spray

Directions:

Generously spray large fry pan with non-stick oil. Place all chopped vegetables in the pan over medium heat.

Sauté for 5 minutes.

Add the spices, salt, pepper and the tomatoes. Bring to a boil, then reduce heat to low.

Cover and simmer for about 1˝ hours, stirring occasionally.

Remove bay leaves before serving.
