1⅔ cups raw onions-- I prefer sweet but any kind is fine
¼ cup balsamic vinegar
1 pound bag kale - washed and ready to use
salt and pepper
non-stick cooking spray

Directions:
Directions:
Preheat oven to 375º. (This can also be baked at 200º for approximately 2 hours.)

Cut onions into fairly large pieces. Put onions in bowl and toss with balsamic vinegar, salt and pepper.

Cover a cookie sheet with foil and spray generously with non-stick cooking spray. Spread onions on sheet and place in oven.

Bake for 1 hour, checking and stirring occasionally-- or at the lower temperature for up to 2 hours. Onions will caramelize in the oven.

Remove large rib from leaves of pre-washed kale. Place kale in large pot of boiling water to steam, about 10 minutes. Remove kale when limp but still slightly chewy.

Mix kale with onions, adding additional balsamic vinegar, salt and pepper to taste.
