3 tbsp extra-virgin olive oil
2 pounds boneless chicken breasts
kosher salt
freshly ground pepper
1 pound baby red potatoes, quartered
2 tbsp butter, softened
5 cloves minced garlic
2 tbsp fresh thyme-optional
2 tbsp fresh chopped parsley
2 tbsp freshly grated Parmesan
more Parmesan for serving

Directions:
Directions:
1. in large skillet over medium-high heat, heat olive oil. add chicken and season with salt and pepper. sear until golden brown about 3 minutes per side.
2. in crock pot toss potatoes with melted butter, garlic, thyme, parsley and Parmesan. season generously with salt and pepper.
3. cook on high for 4 hours or low for 8 hours or until potatoes are tender and chicken in cooked through.
4. serve with extra Parmesan cheese
